Pineapple Curry

Here you go friends - I hope you like it!

To make pineapple curry you need to following -

Chicken breasts - I use about 1 1/2 large ones sliced thinly
1 can of chunk pineapple
1 can 16 oz I think) of bamboo shoots
1 small can of red curry paste
1 large can of coconut milk (open upside down and mix together)
Thai green beans - they are very long
Thai basil
Fish sauce - optional
Jasmine Rice

Find yourself an Asian market and you can get  items 2-6 there. 

I like to prep everything first. Wash about 6-8 green beans for in the curry and then you will want some raw ones to eat on the side.  Wash basil and pick leaves off stems.  Cut if you want. Slice chicken thinly and bite sized.

In a large pot, on med-high, put large put whole can of curry paste and half of the coconut milk. Once hot put chicken in and stir.  Cook chicken thoroughly. If you use fish sauce add 3 squirts now. Turn heat down to med and add drained pineapple, drained bamboo and cut green breans and rest of coconut milk.  Let it cook for a few mins then add basil.  Give it a few more mins and then serve over rice with raw green beans on the side.  Enjoy!
